I am Nikki, a 32 year old single mother of 2 beautiful daughters aged 9 and 7.
I have started this blog primarily for my own purposes, to serve as a record or diary of sorts of my weight-loss journey...my struggles and successes as well as other aspects of my life as a single mum. Hopefully it will also help me to connect with other people on the same journey. I would love to hear tips or stories from anyone.
I have an underactive thyroid, which can be an added issue for anyone trying to lose weight but I feel that I have finally found something that is working out for me. I have been following a more primal/paleo food plan, and while I have been in no way perfect with it, I have managed to lose some weight and have experienced more energy and my cravings for bread have pretty much gone. I have been trying to stay on the lower carb side of things - around 80-100g of carbs per day. This is perfectly achievable while not eating processed foods and grain products such as bread and pasta. I get my carbs from vegetables and occasionally a little rice.
